The most popular treat in the summer is ice cream. The cool things about this sugary goodness is that you can do many things with it: sundaes, floats, sandwiches, cakes, triffles…

What you need:

  • ice cream
  • waffle bowls
  • whipped cream
  • berries (or your favorite toppings)

What makes this dessert extra special is the cute waffle bowl.

The kids will have fun arranging the berries and scooping the ice cream. I can see them proudly serving these sundaes to grandparents.

2. Ice Cream And Cookie Sandwich

Anyone would love to indulge on these sandwiches!

A simple summer dessert you can put together in a matter of minutes… if you already have the cookies made or bought.

What you need:

  • cookies
  • ice cream
  • toppings (sprinkles, chocolate chips, nuts, crushed corn flakes, coconut flakes)

Soften the ice cream and spread some on a cookie. Top with another cookie and roll in the toppings.

It’s going to be exciting to see what kind of combos your kids come up with!

3. Dip the Sandwich

A fun alternative to rolling the ice cream cookie sandwiches in toppings is to dip the sandwich in melted chocolate or candy coating.

These really look fancy but are so easy to make with your little pastry chefs.

What you need:

  • cookies
  • ice cream
  • chocolate or candy coating
  • sprinkles

4. The Easiest Way

No need to worry about crumbling up the cookies with this one. Just grab an ice cream sandwich, cut it in half or thirds and roll the sides in the toppings.

Of mix a cup of cool whip with pudding mix and spread between two sandwiches. Cut in thirds.

5. Ice Cream Sandwich Cake

Even the little hands can put this fun ice cream sandwich cake together in no time!

What you need:

  • 24 ice cream sandwiches
  • 2 cups of cream
  • 2 TBS of sugar
  • 18 fun size Snickers, Milky Way or Twix bars
  • 1/2 thick caramel topping (optional)
  1. Whip the cream and sugar.
  2. Chop the candy bars.
  3. Grease a 9*13 pan and place 12 of the ice cream sandwiches at the bottom.
  4. Top with 1/2 of the whipped cream.
  5. Sprinkle 2/3 of the candy crumble on top of the cream.
  6. Repeat the layers.
  7. Microwave the caramel topping and drizzle it on top of the ice cream cake.

6. Chocolate Covered Strawberries

Actually yes, raspberries and chocolate!

Choose either berry or both and make yummy chocolate covered treats to be enjoyed on a summer afternoon.

What you need:

  • Strawberries
  • Chocolate, melted

Wash the strawberries. Melt the chocolate in your favorite way and dip the strawberries in it.

7. Chocolate Covered Bananas

I don’t know if monkeys would eat chocolate covered bananas but I bet your kids would love them!

What you need:

  • 2 bananas
  • 12 toothpicks or popsicle sticks
  • 12 oz or about 2 cups of chocolate chips
  • 1 TBS or coconut oil (or oil of your choosing)
  • toppings (optional)
  • Line a cookie sheet with parchment paper.
  • Peel and cut bananas in 1 inch slices.
  • Insert a toothpick into each slice and place on a cookie sheet.
  • Freeze 30 minutes.
  • Melt the chocolate and oil. Stirll after each, until chocolate is completely melted.
  • Dip the bananas in chocolate mix; sprinkle with toppings and place on the parchment paper. Let the chocolate set.
  • Store in freezer.

8. Fruit Salad and Jello Cups

Fruit is delicious anyway but it is even more delicious when served as a salad, with a dip, or in jello.

Chopping up fruit and arranging them on a platter brings a smile on your face and makes your mouth water.

Just can’t wait to put those juicy treats in your mouth.

What you need for fruit salad:

  • fruit

What you need for fruit jello cups:

  • fruit
  • jello

Prepare the jello according the instruction on the package. Pour into serving cups. Add few berries, mango pieces, mandarin oranges, grapes…

What you need for easy yogurt fruit dip:

  • 1 cup plain yogurt
  • 2 TBS maple syrup or honey
  • 2 tsp vanilla

Mix the ingredients and enjoy!

For variety and fun try adding some

  • cinnamon
  • pumpkin spice
  • cocoa powder

9. Parfait

Parfaits are easy to make but they look a little fancy.

Kids, teens or whoever is making this snack will have a great time coming up with various combinations.

What You Need for Banana Cheerio Parfait (makes two)

  • banana, sliced
  • 2/3 to 1 c Cheerios
  • 2 c yogurt
  • honey (optional)

Put 1/2 c of yogurt in a jar, top with cheerios and banana slices and little bit of honey. Repeat the layers.

10. Brownie Parfait

This would be the winner for me! I love, love, love chocolate with raspberries.

A lovely dessert for teens to make and enjoy together on a beautiful summer evening.

What you need (4-6 parfaits)

  • Brownies
  • Whipped cream (1 cup of heavy cream and 1/4 c of powdered sugar)
  • 1/2 lb of raspberries
  • chocolate chips
  1. Prepare the brownies with your favorite recipe or use a brownie mix. Let cool and cut into little squares.
  2. Make the whipped cream.
  3. Place brownie pieces in serving cups. Top with raspberries and whipped cream. Repeat layers and finish by sprinkling chocolate chips on top.

11. Fruit Parfait

Yummy! This one won’t give you as big of a sugar rush as the brownie one… And perhaps sometimes we could just eat something less rich and more fruity and light.

What you need (3-4 parfaits):

  • A can of peaches or a couple of fresh peaches. (Apricots and mangoes would be awesome too)
  • Pudding mix (cheesecake, vanilla or whatever flavor you like)
  • A cup of berries
  • Wafer cookie, biscotti, fudge (optional)
  1. Prepare the pudding according to instructions in the package.
  2. Chop up the peaches and put in serving cups.
  3. Top with pudding and berries.
  4. Stick in a cookie or fudge slice.

What Am I

Or fondue in which to dip

12. Chocolate Truffles

What you need:

  • 1/2 coconut oil
  • 1/2 honey
  • 1/2 cacao powder
  • 1 tsp vanilla
  • 2 cups of shredded coconut
  • 1 cup of toppings (shredded coconut, chopped nuts, raisins, cacao powder, powdered sugar)
  1. Mix well the first four ingredients (oil, honey, cacao, vanilla).
  2. Add 2 cups of shredded coconut and mix.
  3. Shape the mix into balls. (Mine are about 1 TBS)
  4. Roll the balls in the extra coconut.
  5. Put the balls on parchment paper or cookie sheets and freeze 15-20 minutes.

(Store in the fridge)

13. Milk and Cookies Lasagna

Milk and cookies. The comfort food year around! I must warn you though, it is easy to eat too many cookies this way.

What you need:

  • Chocolate chip cookies (about 20 oz)
  • 3/4 cup of milk for dipping
  • 8 oz of cool whip or whipped cream
  • chocolate chips (optional)
  • hot fudge (optional)
  1. Put a few cookies a side for topping.
  2. Dip 1/2 of the remaining cookies in milk and cover the bottom of 8*8 pan.
  3. Top with 1/2 of the cool whip or whipped cream.
  4. Repeat the layers.
  5. Top with cookie pieces.
  6. Drizzle with hot fudge and sprinkle chocolate chips on top.

Answer to the cookie riddle: because it was all crumbled up… Hahaha!
